There's a staggering variety of soups and seafood dishes, starters and meals consisting of chicken, game, pork, beef, plus a large number of sauces and gravies which one can pair with the meat preparations.Desserts too feature in enormous number, everything from ice cream to ices, fruit dishes, sherbets and punches. A variety of southern drinks are likewise present; cordials, toddy and eggnogs most notably. Timeless favourites such as brandied peaches receive their own chapter, as do candies and caramels.Healthier options are also present; vegetarian meals and salads occupy several pages. A number of catsups - pureed condiments - are listed, as are a variety of jams, jellies, pickles and other preserves.
